Ingredients
- 1/2 c unsalted butter, softened (1stick butter)
- 1 c sugar
- 2 eggs
- 1 tsp grated lemon peel
- 1/2 tsp vanilla extract
- 1-3/4 c all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp fine sea salt
- 1 c sour cream
- Frosting
- 3 T butter, softened
- 3-1/4 c powdered sugar
- 2 T fresh-squeezed lemon juice
- 3/4 tsp vanilla extract
- 1/4 tsp grated lemon peel
- 1 T milk

Preparation
Step 1
1) In the bowl of an electric mixer, cream together softened butter & sugar.
2) Beat in eggs one at a time.
3) Add lemon peel and vanilla; mix well.
4) In a medium bowl, combine flour, baking soda, baking powder, & salt.
5) Alternately add dry ingredients & sour cream to butter mixture. (Batter will be thick.)
6) Fill paper-lines muffin cups with 1/4c batter.
7) Bake at 350°F for 25 minutes or until a toothpick inserted in center comes out clean.
8) Cool completely.
Frosting:
9) In a small mixing bowl, cream together butter & sugar.
10) Add lemon juice, vanilla, lemon peel, & milk and beat until smooth. After frosting cupcakes, may garnish with lemon zest.
