Ingredients
- 1-1/4 cups yellow cornmeal
- 2 T. scallions, chopped
- 2 tsp. sugar
- 1/2 tsp. baking soda
- 1/2 tsp. kosher salt
- cayenne to taste
- 1/2 cup buttermilk
- 1/2 cup regular milk
- 2 T. butter
- 1/2 cup cheddar cheese, shredded
- 1/4 cup veg. oil, divided

Preparation
Step 1
Combine dry ingredients in bowl; whisk in buttermilk.
Warm regular milk & butter in small saucepan until butter melts, then stir into cornmeal mixture. Let stand 5 min. Stir in cheese.
Heat 1 T. oil in skillet over med-high. Drop batter to make 2" cakes. Fry about 1 min. per side. Repeat.
