Ingredients

  • Cream Filling:
  • 4 egg yolks
  • 3/4 c sugar
  • 4 cans Nestle cream (from Mexican section of grocery)
  • 1 tsp vanilla
  • Coffee Syrup:
  • 1/3 c instant coffee
  • 3/4 c sugar
  • 1/4 c water
  • Lady fingers
  • Dark chocolate

Step 1

In a double boiler, mix together eggyolks and sugar until sugar has dissolved and mixture is lemon yellow in color. Take off the heat and mix in cream and vanilla. Set aside.

In a saucepan, combine coffee, sugar and water. Let boil for about 1-2 minutes or until syrupy

To assemble: Use a 9x9 dish. Coat lady fingers in coffee syrup and arrange a single layer in dish. Pour in half of the cream mixture. Top with grated chocolate. Repeat to make second layer. Chill and serve.

Tips: Sometimes the lady fingers float a bit once the cream filling is poured in. No biggie. Just push them. You can chill the cream prior to use or chill cream filling in refrigerator while making coffee syrup but do not leave long enough for mixture to thicken. I usually double the coffee syrup mixture so its easier to coat lady fingers.
