Ingredients
- Cooking spray
- 1 1/2 c all purpose flour
- 1/2 c yellow cornmeal
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp sugar
- 1/2 tsp salt
- 1 c fat free milk
- 2 tbs lemon juice
- 2 tbs butter, melted
- 1 egg
- 1/2 c cheddar cheese, extra sharp, shredded
- 4 center cut bacon slices, cooked and crumbled

Preparation
Step 1
Place muffin liners in muffin cups, spray and set aside.
Combine milk and lemon juice and let stand for 2 minutes. Add butter and egg, stir until well mixed. Add dry ingredients, cheese, and bacon. Bake at 400* for 17 minutes.
