Ingredients
- 1 pint oysters drained, reserve liquor, about 2 dozen*
- 1/4 cup butter
- 2 celery stalks, minced
- 1/4-1/2 cup red onion, minced
- 1/4-1/2 tsp celery seed
- 1/2 tsp celery salt
- 1 1/2 cups half & half
- 2 1/2 cups milk
- splash of Worcestershire sauce
- Pepper to taste
- 1/4 cup parsley, minced

Preparation
Step 1
1. STRAIN the oyster juice through a fine-meshed sieve into a bowl. Reserve the liquid.
2. SAUTE over medium heat celery and onion in butter until softened.
3. ADD the oysters and sauté until edges are curled, turning once.
4. ADD reserved liquid, celery seed, celery salt, half & half, milk and Worcestershire sauce.
5. HEAT over low heat until heated through.
6. SERVE in bowl, topped with parley, and with oyster crackers.
