Seafood Salad

Ingredients

  • Lettuce leaves
  • 1 (10-oz) package frozen asparagus spears, cooked
  • or fresh asparagus
  • 1 lb. large shrimp, cooked, shelled, deveined
  • 1/2 lb. scallops or cubed white fish, cooked in butter
  • 2 hard-cooked eggs, sliced
  • 1/3 cup pitted black olives
  • Avocado Hollandaise Dressing

Preparation

Step 1

Arrange lettuce leaves on large platter.
Top with asparagus, shrimp, scallops, and eggs arranged in any fashion desired.
Garnish with olives.
Serve with dressing.
