- 1 beef tenderloin (6-8lb)
- 2 T olive oil

Preparation
Step 1
1. Preheat oven to 425 with a rack in the center.
2. Trim tenderloin and cut into 6-8 oz filets; season each filet with salt and pepper. Heat an ovenproof saute pan over med-high for 5 min
3. Sear filets in oil on one side for 4-5 min. Turn them over, place the pan in the oven, and roast to desired doneness. Remove pan from the oven, transfer filets to a plate, tent with foil, and let rest 5 min before serving.
4. Serve with sauce and spinach.
