Ingredients

  • CUPCAKES:
  • 2 1/3 c all-purpose flour
  • 2 1/2 tp baking powder
  • 1/2 tsp salt
  • 1 pkg (0.3oz) cherry or other red unsweetened soft
  • drink mix
  • 1 c. butter or margarine, softened
  • 1 1/4 c sugar
  • 3 eggs
  • 1 tsp vanilla
  • 2/3 c pureed watermelon (about 1 1/2c watermelon
  • pieces)
  • 3/4 c. miniature semisweet chocolate chips
  • ICING:
  • Decorator icing
  • Green paste food color
  • red paste food color
  • DECORATION:
  • 1/4 c. miniature semisweet chocolate chips

Preparation

Step 1

Heat oven to 350 degrees. Line muffin cups.

In medium bowl, mix flour, baking powder salt and drink mix; set aside

In large bowl, beat butter with electri mixer on medium speed 30 seconds. Gradually add sugar, about 1/4 c at a time, beating well after each addition and scraping bowl occasionally,. Beat 2 minutes longer.l Add eggs, one at a time, beating well after each addition. Beat in vanilla. On low speed, alternately add flour mixture, about 1/3 of mixture at a time, and watermelon puree, about 1/2 at a time, beating just until blended. Stir in miniature chocolate chips.

Divide batter evenly among muffin cups, filling each with about 2/3 full.

Bake 20-25 minutes or until golden brown and toothpick inserted in center comes out clean. Cool in pans 5 minutes. Revoe cupcakes from pans, place on cooling rack to cool.

Make Decorator Icing as directed in recipe. Tini 1 c. frosting with green paste food color. Place gren frosting in decorating bag fitted with #19 star tip; set aside. Tint remaining frosting with red paste food color. Frost cupcakes with red frosting to within 1/2" from edge.

Pipe 1 row of green frosting around edge of each cupcake to look like watemelon rind. Decorate each with chocolate chips to look like seeds.

using cake mix:
Substitute 1 box yellow cake mix for the cupcakes above. Puree enough waterelon to make 1 1/4c. Make cake mix as directed on box for cupcakes EXCEPT- use pureed watermelon instead of water, 1/3c. vegetable oil, 3 eggs and 1 pkg (0.3ox) cherry or ther red unsweetened soft drin mix. Sitr 3/4 c miniature chocolate chips into batter. Bake and cool as directed on box. Frost and decorate as directed in recipe.
