Ingredients

  • 4 TBSP butter
  • 4 TBSP FLOUR
  • 1 cup finely diced or pureed onion
  • 5 cups chicken stock
  • 1/2 lb. sharp cheddar cheese, grated
  • 1 dash tobasco sauce
  • 1/2 tsp dry mustard
  • 1 tsp salt
  • 1/2 tsp fresh ground pepper
  • red chili flakes to taste
  • 1/2 tsp worcestershire sauce
  • 1 12 0z beer (pale ale is preferred choice)

Preparation

Step 1

Melt butter into pan, saute onion until soft and transparent, add flour and stir to make a roux, about 2 minutes; do not brown. Add tabasco, dry mustard, pepper, and worcst sauce at this point.
Heat stock and beer in medium stock pot, not to boiling but definetly hot. Begin adding to roux, 1 ladle at a time, whipping to incorporate.
Once all liquid has been added, begin stirring cheese, on small hand full at time.
Taste and season with salt if necessary.
