Ingredients
- 2 cups all purpose flour
- 1 cup frozen or fresh cranberries chopped
- 3/4 cup sugar
- 1/2 cup chopped walnuts
- 2 1/2 tsp baking powder
- 1/3 tsp salt
- 2 eggs, beaten
- 1 tsp grated orang rind
- 2/3 cup orange juice
- 1/2 cup mayonnaise

Step 1
Preheat oven to 350 degrees. Grease a 9x4 inch loaf pan and set aside.
In a large bowl, combine flour, cranberries, sugar, baking powder and salt. In a small bowl, beat eggs, orange rind, orange juice and mayonnaise until smooth. Stir into flour mixture just until moistened. (Batter will be stiff). Spoon into prepared pan. Bake in pre-heated oven for one hour and 10 to 15 minutes, doing t5he toothpick test. Cool on rack for 10 minutes.
