Ingredients

  • 1 large avocado
  • 1 medium plum tomato
  • 1 medium orange or two mandarins, peeled and segmented
  • 1 mango, diced
  • 1/2 can (19 ounces) black beans, rinsed and drained
  • 1/2 teaspoon salt
  • 1 tablespoon fresh cilantro leaves, chopped
  • 4 tsp. extra virgin oil
  • 2 tsp. fresh lime juice
  • 1/2 tsp. honey
  • 1 pinch cumin
  • 8 large shrimp, steamed and chilled

Step 1

Combine dressing ingredients, adjusting to taste. I didn't add the cumin the first time, but I think it would work.

Peel avocados; discard seeds. Cut avocados and tomatoes into bite-size chunks.

In bowl, gently toss avocados, tomatoes, orange slices, black beans, cilantro, and salt with avocado oil and lime juice. Plate, top with shrimp and serve (with cocktail sauce on the side for Dan)

Makes 2 or 3 servings, depending on our hunger level.
