Ingredients

  • 1/4 cup all purpose flour
  • 1/2 t salt
  • 1 1/2 lbs beef round steak, cut into bite size pieces
  • 3 cups new red potatoes, peeled and quatered
  • 1 onion, diced
  • 1 clove garlic, minced
  • 14 1/2 oz can italian style diced tomatoes
  • 3/4 cup beef broth or water
  • 1 cup canned sliced carrots
  • 1 cup canned corn
  • 1 cup canned green beans

Step 1

Mix flour and salt together in a shallow bowl. Add beef; toss to coat well. Spray a skillet with non stick vegetable spray; heat over medium heat. Brown beef on all sides. In a slow cooker, layer potatoes, beef, onion, and garlic. Stir together tomatoes, broth and any remaining flour mixture; pour over top. Cover and cook on low setting for 7 to 8 hours, until beef is tender. Add remaining vegetables and cook until warmed through, about 10 to 15 minutes. Makes 6 servings.
