Ingredients
- 1/4 cup all purpose flour
- 1/2 t salt
- 1 1/2 lbs beef round steak, cut into bite size pieces
- 3 cups new red potatoes, peeled and quatered
- 1 onion, diced
- 1 clove garlic, minced
- 14 1/2 oz can italian style diced tomatoes
- 3/4 cup beef broth or water
- 1 cup canned sliced carrots
- 1 cup canned corn
- 1 cup canned green beans

Step 1
Mix flour and salt together in a shallow bowl. Add beef; toss to coat well. Spray a skillet with non stick vegetable spray; heat over medium heat. Brown beef on all sides. In a slow cooker, layer potatoes, beef, onion, and garlic. Stir together tomatoes, broth and any remaining flour mixture; pour over top. Cover and cook on low setting for 7 to 8 hours, until beef is tender. Add remaining vegetables and cook until warmed through, about 10 to 15 minutes. Makes 6 servings.
