Ingredients

  • 8 small sweet potatoes (3 pounds) - scrubbed
  • 1/4 cup grated Parmesan cheese (1 oz)
  • 1/8 t's cayenne pepper
  • Olive oil spray

Preparation

Step 1

1. Preheat oven to 425

2. With a sharp knife, cut off four 1/4 inch thick skins from each potato. Save the center for other things

3. Place on rimmed baking sheet. Bake until tender (20-25 minutes).

4. In a bowl, mix cheese and pepper. Remove potato skins from oven and lightly spray with olive oil and sprinkle with cheese and cayenne mix. Broil for 4 to 5 minutes or until golden brown.

Options for Sprinkle mix:

smoked paprika and sea salt
or
brown sugar and cumin
or
Use asiago or chedder cheese
