Ingredients
- 2 pounds dry pink (pinto) beans
- 2 medium onions, sliced
- 1/4 cup vegetable oil
- 2 cloves garlic, diced
- 1 cup celery, chopped
- 2 pounds lean ground beef
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon dried tyme
- 3 cups canned solid-pack tomatoes
- Salt & pepper

Preparation
Step 1
1. Rinse beans and soak overnight in cold water.
2. Drain beans and place in a 2-quart saucepan.
3. Add fresh water to cover by 2 inches.
3. Add sliced onions and simmer 2 hours or until tender.
4. Meanwhile, heat oil in a large soup pot and saute garlic.
5. Add celery and beef and cook until browned.
6. Add chili powder, paprika & thyme.
7. Break up tomatoes and add to pot, blending well.
8. Cover and simmer 1 hour.
9. When beans are tender, add to pot and and gently blend.
10. Add salt & pepper and continue to cook for 30 minutes.
