Crockpot Beef Curry

Ingredients
- 2 lbs lean stewing beef cut into small cubes
- �" cup all-purpose flour
- 2 tbsp yellow curry powder (divided)
- 3/4 cup diced onion
- 3/4 cup raisins
- 3/4 cup cauliflower florets
- 1 cup beef broth
- 1/2 cup unsweetened applesauce
- 2 tsp minced garlic
- 1 tsp ground black pepper
- 1/2 tsp salt
- 1/2 tsp finely grated ginger
- 1/2 tsp ground turmeric
- 1/2 tsp ground cumin
- 1/4 tsp ground nutmeg
- 1/4 tsp ground coriander

Wipe the beef cubes with a paper towel to ensure they're dry. Pour the flour and one tbsp of curry powder into a plastic bag. Seal the bag and shake to mix the flour and curry. Add the beef cubes to bag, and seal. Shake bag around, and heavily coat each cube with mixture.
Open bag, and place meat into a large slow cooker, at least two quarts big. Add onions, raisins and cauliflower to the beef. In a large mixing bowl, stir together beef broth, applesauce, garlic, black pepper, salt, ginger, turmeric, cumin, nutmeg, coriander and remaining tbsp curry powder. Pour the mixture into the crockpot with the beef. Mix gently, making sure the spice-filled liquid coats everything.
Cover crockpot with lid, and set to low. Let beef curry cook for 8 hours. Check on the curry to make sure the beef is fully cooked and the sauce is thick. If the beef is a little undercooked or the sauce is thin, turn the heat to medium and cook the curry, uncovered for 10 to 15 more minutes. Mix the beef curry well before serving. This can be served alone or over rice.
If you're looking for a slightly spicier curry, try adding 1 tsp paprika, ½ tsp cayenne pepper, ¼ tsp ground clove and an extra ¼ tsp turmeric to the original recipe
