Ingredients

  • 1/2 cup Butter plus more to prepare pan
  • 15 Lasagna noodles
  • 2 cups Cottage cheese
  • 1 Egg - beaten
  • 1/2 tsp. Onion salt - divided
  • 2 cups Mashed potatoes
  • 1/2 cup Grated cheddar cheese
  • 1/4 tsp. Black pepper
  • 1 cup Diced red onion
  • Sour cream

Preparation

Step 1

Preheat oven to 350 degrees.

Lightly butter a 9x13 pan.

Cook lasagna noodles according to package directions. Drain well. Line bottom of prepared baking pan with 5 noodles.

In a medium bowl, combine mashed potatoes, cheddar cheese and pepper with remaining 1/4 teaspoon salt; mix well. Spread mixture evenly in pan. Layer the last 5 noodles on top of the mashed potato mixture.

In medium frying pan, melt 1/2 cup butter over low heat. Add red onion and cook until onions are just soft. Pour evenly over the last layer of noodles. Bake, covered, for 30 minutes or until hot throughout.

Let stand on a wire rack for 10 minutes before serving. Serve with sour cream. 450 calories, 17 gms. fate, 40 mg. cholesterol
