Ingredients
- 3/4 lb fresh ricotta
- 1/4 cup heavy cream
- 1/4 cup XXXX sugar (can substitute Splenda)
- 1 tsp vanilla
- 1 pint fresh strawberries, hulled & halved
- or 3 plums - ripe
- or Nectarines
- or fresh figs
- (or combination of some or all of above)
- 1/2 cup honey (clover)
- fresh black pepper
- fresh mint springs for garnish

Preparation
Step 1
Combine ricotta, heavy cream, XXXX sugar, and vanilla extract in a large bowl and whip using a whisk until light and fluffy - about 1 1/2 minutes.
Spread ricotta on a platter, top with fruit, drizzle with some honey, and season with a sprinkling of freshly ground black pepper. Garnish with fresh mint springs
