Wine Jelly

This is a simple wine jelly recipe I found. It works with all kinds of wines. Just use what you like. For a special treat, use on crackers with cream cheese.

- 2 cups wine
- 3 1/4 cups sugar
- 1 Tablesoon Lemon Juice
- 1 pouch liquid pectin

Wash all the jars, lids & bands in hot soapy water and rinse throughly. Next, put the jars in a large pot with enough water to cover them by 2 inches. Bring to a water to a boil. Put the lids and bands in a small pot with enough water to cover. Bring the water to a boil, remove from heat and set aside.
Put the wine, sugar and lemon juice in a large pot. Bring to a boil, stirring constantly. Remove from heat and stir in the pectin. Return to heat and bring to a full boil for 1 minute, stirring constantly. Remove from heat. For ease, I pour the hot liquid into a large measuring cup that has a spout to make pouring easier. You can also use a ladle to remove the jelly to pour into the jars.
Remove the jars from the water, but keep the water hot. You will be using it to process the jars. Leave the rims in the hot water until ready to use.
Pour or ladle the liquid into the jars to within 1/4" from the top. After wiping the rims clean, put the lids and the bands on the jars.
Place the rack for jars in the pot. Place the jars on the rack and ensure there is at least an inch over the top of the jars. Bring the water to a boil and process for 10 minutes.
Lift jars from water and set on a towel until cool. The jelly will set as it cools. Press the center of lids to test seal; if lids stay down, jars are sealed
