Mom's Apple Pie

Ingredients
- 6 large Granny Smith apples, peeled, cored & thinly sliced
- 1 1/2 cups sugar
- 3 Tbs. flour (more if apples are large)
- 2 Tbsp. vanilla
- 1 tsp. Cinnamon
- 1 tsp. Allspice (or Apple Pie Spice)
- 1 stick butter (divided 2/3 - 1/3)
- 2 Pie crusts - prepared

Preparation
Step 1
Oven to 400 degrees
Peel, core and slice 8 Granny Smith apples
Add cornstarch, sugar and mix well
Melt 2/3 stick butter in microwave, add 2 tablespoons vanilla and pour over apple mixture
Pour apple mixture into pie crust, cover with top crust & crimp edges
Melt 1/4 stick butter in microwave and brush over top crust.
Put a protective sleeve of alumn. foil around edges. Bake pie in middle of oven (not top rack) for 45 minutes. Check during later stages of cooking to see if top is browning too fast, if so, lay a piece of foil over the top & finish cooking.
Be sure to place a tray under the cooking pie so that any juices will be caught.
