  • 2 tbsp. olive oil
  • 1/3 cup balsamic vinegar
  • 1 tsp. soy sauce
  • 2 tbsp. unsalted butter, cut into 2 pieces

Step 1

Arrange cutlets on a tray or baking sheet and season with salt and pepper.

Heat a 12 inch heavy skillet (non stick) over moderately high heat until hot. Add 1 tbsp. oil and swirl to coat bottom. Cook chicken, turning once or twice, until cooked through (adjust heat lower as necessary to keep bits on bottom from burning and add remaining tbsp. oil if pan begins to look dry.

Transfer chicken as cooked to a platter and keep warm loosely covered with foil.

Add vinegar and boil, stirring and scraping up brown bits, until reduced by half. Add soy sauce and chicken juices accumulated on platter and bring to a simmer.

Remove skilllet from heat and add butter, stirring until incorporated and sauce is smooth. Season with salt and pepper and spoon over chicken.
