  • 4 cups quartered new potatoes
  • 6 slices bacon
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup chopped green onions
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Preparation

Step 1

-Preheat oven to 425*
-Place the potatoes on a baking pan sprayed with non stick cooking spray.
-Bake the potatoes for 40 minutes or until tender and golden brown. Remove from the oven and cool slightly.
-Fry the bacon in a large skillet until crisp. Drain on paper towel and crumble.
-Combine the sour cream, mayonnaise, green onions, salt and pepper in a large bowl and mix well. Add the bacon and toss gently to mix.
-Serve warm or at room temperature.
