These make great little appetizers, and you can make them as big or little as you like. I also like them as a side dish. Great way to get veggies into the kids.

Ingredients

  • 8 oz. cream cheese, softened
  • 1/2 C. grated Parmesan Cheese
  • 3 Tbsp. lemon juice
  • 5 fresh basil leaves, chopped
  • 1 sheet frozen puff pastry, thawed
  • 1 lb. (16 slender stalks) fresh asparagus
  • 2 Tbsp. olive oil
  • 2 Tbsp. shaved Parmesan Cheese

Step 1

Combine the cream cheese, grated Parmesan cheese, lemon juice and basil.

Unfold pastry on a parchment lined baking sheet. (or use cooking spray). Cut into four rectangles, placin them slightly apart on the baking sheet. Spread cream cheese mixture to within 1/2 inch of edeges. Trim asparagus spears to fit on squares. Press into cheese alternating direction. Drizzle with olive oil.

Bake at 400 degrees for 18 - 22 minutes or until golden brown. Sprinkle with shaved Parmesan.

Slice each pastry in half for 8 large pieces or into 4 pieces each for 16 appetizer size pieces.
