Ingredients

  • 8 cups large diced vegetables (sweet potatoes, white potatoes, brussel sprouts, red or green pepper, onion, zucchini, yellow squash, etc.)
  • Cooking spray
  • 4 teaspoons Olive Oil
  • 4 tablespoons white wine vinegar
  • 2 tablespoons melted butter
  • 3 cloves garlic sliced
  • 1 teaspoon Florida Sunshine blend
  • 2 teaspoons California Blend

Preparation

Step 1

Spray roasting pan with coking spray. Peel and dice (large chunks) all vegetables. Mix vegetables together in large bowl. In small bowl, mix oil, butter, vinegar, garlic and spices. Pour over vegetables and mix. Pour into baking pan and roast at 400 for 45 minutes (or until vegetables tender), stirring every 15 minutes.
