Garlic and Green Onion Mashed Potato Casserole

Ingredients
- 3 lb. baking potatoes, peeled and quartered
- 9 cloves of garlic
- 1/2 cup heavy cream
- 1 1/2 sticks unsalted butter, softened
- 1/3 cup minced green onion
- Melted unsalted butter

Preparation
Step 1
Cook potatoes in salted water until tender.
Place garlic and cream in a small saucepan. Simmer until garlic is softened. Put butter and onion in same saucepan and heat until butter is melted.
Mix all ingredients and whip until smooth. Season to taste.
Place in large baking dish and brush with melted butter.
NOTE: May be made ahead to this point and reheated at 400 degrees for 20 minutes.
Broil until golden.
