Ingredients

  • 3 medium size zucs, shredded (about 1 #)
  • 3/4 tsp salt
  • 1 medium onion, finely chopped (about 1/2 cup)
  • 1 Tbs butter
  • 2 eggs slightly beaten
  • 1/4 cup unsifted flour
  • 1/8 tsp pepper
  • Vegetable oil for frying

Preparation

Step 1

Place zucs in colander and sprinkle with 1/2 tsp salt. Set aside for 30 minutes.

Squeeze out liquid from zucs.

Saute onion in butter until soft.

Transfer zuc and onion to large bowl. Stir in eggs, flour and remaining salt and pepper.

Pour oil into frying pan about 1/8 inch deep and heat. Drop slightly rounded tablespoons of zuc mixture into oil. Flatten to 3 inch diameter with back of spoon. Cook, turning once-1 minute on each side, until golden brown.

Remove pancakes with slotted spoon, drain on paper towel. Keep warm in oven until all are cooked.
