Ingredients
- . SALAD :
- 1 ) 6 ounces long grain & wild rice package
- 2 ) 2 1/2 cups cooked chicken breasts, cubed
- 3 ) 8 oz. can of sliced water chestnuts
- 4 ) 1/2 cup chopped green onions
- 5 ) 1/2 cup celery
- 6 ) 1/2 cup toasted almonds or pecans
- 7 ) 1 cup green seedless grapes, cut in half
- Prepare rice according to package directions. Combine rice, chicken, water chestnuts, green onions, celery, nuts and grapes in a bowl with a tight fitting cover.

2. DRESSING:
1) 1 cup mayonnaise
2) 1/2 cup vegetable oil
3) 1/4 cup vinegar
4) 1/4 cup lemon juice
Blend all the ingredients together with a whisk, pour into chicken mixture. Add enough dressing to moisten. Refrigerate 1 to 2 days before serving.
