Ingredients

  • White batter:
  • 1-1/2 plus 3 tblsp cake flour
  • 2 tsp bkg powder
  • 1 cup sugar
  • 3 egg whites
  • 1/2 cup butter
  • 3/4 cup milk
  • 2 tsp vanilla
  • Black batter: will need only half
  • 2/3 cup cocoa
  • 1/3 cup boiling water
  • 1-1/4 cups sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 cup cake flour
  • 3/4 cup butter
  • 3 eggs
  • 1 tblsp vanilla
  • Frostings:
  • 2-1/2 cups sugar
  • 1/4 cup corn syrup
  • 1/2 cup cream
  • 1/2 tsp salt
  • 9 tblsp butter
  • 1 tblsp vanilla
  • 1-1/2 cups powdered sugar
  • 1/2 cup cocoa

Preparation

Step 1

Preheat oven to 350*. Prepare 2 cupcake pans. Put dry ingredients in a mixing bowl and mix together. Add the butter and incorporate. Add 1/2 of the milk and incorporate. In another mixing bowl whip the egg whites till frothy then add the rest of the milk and the vanilla. Mix with the dry ingredients and incorporate well. Done white! For the chocolate cupcakes mix the chocolate with the hot water and cool to room temp. Mix the dry ingredients. Cream the butter and sugar, then add the eggs and vanilla. Add the dry ingredients and the chocolate and beat till combined. Done black!
With a large round tip and a pastry bag fill each with batter. Now get a friend. Fill bags together to get a half and half effect. Bake 25 minutes.
Frosting:
Heat the sugar, syrup, cream and salt till it reaches 239*. Meanwhile beat the butter, vanilla, and powdered sugar in a stand mixer. When sugar reaches the temp slowly add it while the mixer is on low speed. Pour half into a bowl and add the chocolate to the rest, mixing well. Frost while frosting is still warm for best results.
