Lemon Thyme Shortbread Cookies

Ingredients
- 3/4 cup butter, softened
- 1/2 cup confectioners sugar
- 1 T. grated lemon zest
- 2 t. dried thyme leaves
- 1 1/2 cups all purpose flour
- 1/4 t. salt

Preparation
Step 1
In a medium bowl, beat butter and sugar at medium-high speed with a mixer until creamy. Add lemon zest and thyme, beating until combined. In a small bowl, combine flour and salt. Gradually add to butter mixture, beating until combined. Shape mixture into 2 (10 inch) logs; wrap in plastic wrap, and chill for 1 hour.
Preheat oven to 350. Line baking sheets with parchment paper.
Unwrap dough, and cut into 1/3 inch-thick slices. Place on prepared baking sheets, about 1 inch apart. Bake for 11 minutes or until edges are lightly browned. Let cool on pans for 2 minutes. Remove from pans, and cool completely on wire racks. Store in an airtight container for up to 1 week.
