Easy Blackberry Cobbler

Ingredients
- 4 cups Blackberries (frozen equals 1 small pkg) 1 Tbsp Lemon juice
- 1 egg
- 1 cup Sugar
- 1 cup Flour
- 6 Tbsp Butter - melted
- 1 pkg sml Vanilla pudding - not instant
- 2 1/2 cups Milk

Preparation
Step 1
Preheat oven to 375
Lightly grease 8x8 pan.
Place blackberries in pan & sprinkle with 1 tbsp lemon juice. Stir together 1 large egg, 1 cup sugar, & 1 cup all-purpose flour in a medium bowl until mixture resembles coarse meal (use fork - not mixer). Sprinkle over fruit. Drizzle 6 tbsp melted butter over topping.
Bake at 375 for 35 minutes or until lightly browned and bubble. Let stand 10 minutes. Serve warm with whipped cream or vanilla pudding below.
Cook 1 small pkg of vanilla pudding using more milk than pkg calls for. (3 cups of milk was a little too much - try 2 1/2 cups). Spoon over warm cobbler and serve.
