Can be made with any kind of white fish as long as it isn't thin fillet but fairly thick chunks.

Ingredients

  • 2 t dried basil
  • 1 t dried oregano
  • 2 T olive oil, divided
  • juice of 1 lemon
  • 4 halibut fillets or steaks (approx 1 lb total)
  • 3/4 c finely chopped onion
  • 2 gaqrlic cloves, minced
  • 3/4 c chopped plum tomatoes or Roma
  • 1/2 c sliced black olives
  • 1/2 c dry white wine or cooking sauterne
  • 1/2 c crumbled feta cheese
  • Lemon wedges

Preparation

Step 1

1 In a medium shallow dish, combine basil, oregano, 1 T oil and lemon juice. Add halibut, turning to coat both sides. Marinate at room temp for 5 to 10 min.
2 Heat a large non-stick skillet over medium heat. Add halibut and fry for 3 to 4 min. per side or until brown on both sides. Transfer to a plate and keep warm.
3 Wipe out skillet, add remaining oil and saute onion for 3 to 4 min or until softened Add garlic and saute for 30 sec. Add tomatoes, olives, and wine, boil, stirring, until the wine is slightly reduced. Return fish to skillet and spoon sauce over top, reduce heat and simmer for 1 to 2 min or until fish is opaque and flakes when tested with a fork.
4 Place each fillet or steak on a plate and drizzle sauce over top. Sprinkle evenly with feta cheese and garnish with lemon wedges
