Ingredients
- 4 tblsp margarine, softened
- 2 tblsp heat stable sugar substitute equal to 3 tblsp
- sugar
- 1/4 cup egg substitute or 2 egg whites, slightly beaten
- 3/4 cup unsweetened applesauce
- 1/4 cup frozen unsweetened apple juice concentrate
- thawed
- 1 tsp vanilla extract
- 1 cup all purpose flour
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt (optional)
- 1 1/2 cups Quaker Oats uncooked
- 1/3 cup raisins, chopped

Preparation
Step 1
Preheat oven to 350 degrees
1. Lightly spray cookie sheet with cooking spray
2. In large bowl, beat margarine & sweetener until
creamy.
3. Add egg substitute, beat well.
4. Add applesauce, apple juice concentrate, & vanilla
5. Beat well
6. Add conmbined flour, baking soda, cinnamon &
salt; mix well
7. Add oats & raisins
8. Mix well
9. Drop dough by rounded teaspoonfuls onto cookie
sheet
10. Bake 15 - 17 minutes or until firm to the touch &
light golden brown
11. Cool 1 minute on cookie sheets; remove to wire
rack or paper towel.
