Chocolate Loaf Cake
only baked for 45 min in convection oven - maybe needs less time
- 1 1/2 cups flour
- 1/2 cup cocoa powder
- 2 eggs
- 3/4 cup sugar
- 1/2 cup vegetable oil
- 1 cup sour cream (I used light)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips
Preheat the oven to 350 degrees and grease an 8 inch loaf pan.
In a large bowl sift the flour, sugar, baking powder, baking soda and salt.
In another bowl whisk the eggs, oil, sour cream, and vanilla.
Add the liquid to the dry mixture. Mix just until incorporated, and add chocolate chips, don't over mix. I only used maybe less then 15-20 stirs. Pour the batter into the greased loaf pan.
Bake at 350 degrees for 60-70 minutes, until a fork inserted comes out clean. Cool for at least 15 minutes in the pan before cutting and serving.
Serve warm with some ice cream, fresh berries and fresh whip cream, freaking YUM! I didn't have time to take a picture of it with all the fun stuff added because I was so excited to eat it.
