  • 2 cups cooked quinoa
  • 3 eggs
  • 1/2 cup chocolate almond milk
  • 1 tbsp molasses
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 2 tsp (aluminum-free) baking powder
  • pinch of salt

Preparation

Step 1

To aid in digestion, I soaked the quinoa overnight before cooking. We also used local eggs and (raw) butter from the farm.

Blend quinoa, eggs, milk, molasses, and vanilla together until smooth. Add cinnamon, baking powder and salt and blend.

If you are used to sweetener you can add honey or sweetener of your choice.
I buttered the griddle with our local raw butter, and cooked small pancakes. It made about 40 of them, and feeds about three hungry folks.
