Ingredients
- 4 cups Pecans - chopped
- 3/4 lb Candied Cherries
- 1 lb Candied Pineapple
- 1 3/4 cups Self-Rising Flour
- 1 cup Butter
- 5 Eggs
- 1 cup Sugar
- 1 oz Vanilla Extract
- 1 oz Lemon extract (optional)

Step 1
DO NOT PRE-HEAT OVEN!
Line loaf pan with heavy brown paper and add oil to paper
OR
use bundt pan, heavily oiled.
If you use regular flour, add 1/2 tsp of baking powder)
Chop pecans; set aside. chop cherries & pineapple into medium pieces & dredge with a small amount of flour
Cream butter and sugar until light and fluffy. Add well-beaten eggs and blend well. Sift remaining flour (and baking powder); fold into egg and butter mixture. Add vanilla and lemon extracts; mix well. Add fruits and nuts, blending well by hand.
Grease a 10-inch tube pan or two loaf pans. Line with heavy BROWN PAPER and grease again. Pour batter into pan(s). Place in COLD OVEN and set temperature for 250 degrees.
Bake 3 hours
