Creamy French Onion Dip

Avoid red onion, which will turn the dip murky brown. For an accurate measurement of boiling water, bring a kettle of water to a boil, then measure out the desired amount. Serve with baked potato chips or curdites.

Ingredients
- 2 onions, minced (about 2 cups)
- 1 tbsp olive oil
- Salt
- 8 oz. 1 % cottage cheese (about 1 c.)
- 1/4 c. boiling water
- 1 c.. low-fat sour cream
- 1/2 tsp Worcestershire sauce
- 1/4 tsp garlic powder

Step 1
Combine the onions, oil, and 1/4 tsp salt in a large nonstick skillet. Cover and cook, stirring occasionallym over medium-low heat until softened, 8-10. Uncover, increase the heat to medium-high, and continue to cook until the onions ae well browned, 8-12 minutes longer.
Process the cottage ceese and boiling water together in a blender until no lumps remain, about 30 seconds. Add half of the caramelized onions and blend until completely smooth, about 30 secons. Transfer the mixture to a medium bowl, and whisk in the remaining caramelized onions, sour cream, Worcestershire, garlic powder, and 1/4 tsp pepper. Season with salt and pepper to taste. Cover ad refrigerate until the flavors blend, at least 1 hour or up to 3 days. Serve
