Ingredients
- 2 pounds of fresh green beans
- 2 oz salt pork (or 4 slices of bacon)
- 1 cup chopped onions
- 12 to 14 new potatoes
- 2 tsp salt plus more to taste
- Fresh black pepper

Step 1
Remove ends and string the beans. Combine the green beans, pork, onions, new potatoes and salt in a large sauce pan. Add water to cover (can replace some or all of the water with low/no sodium chicken broth) and bring to a boil over high heat. Reduce heat, cover and simmer for 45 minutes to 1 hour or until beans and potatoes are tender when pierced with a fork/ Adjust salt and pepper before serving.
