Broccoli (or Yellow Squash) Casserole

Ingredients
- 1 egg, beaten
- 1 onion, finely chopped
- 1 (8 oz.) carton sour cream
- 1 can cream of broccoli soup
- 1 (10 oz.) box frozen broccoli pieces, thawed
- 1 (8 oz.) package corn bread stuffing, divided
- 1 (16 oz.) package grated cheddar, divided
- 2 tablespoons butter

Preparation
Step 1
Preheat oven to 350 degrees. Spray casserole dish with cooking spray.
In a large bowl, mix egg, onion, sour cream, soup, broccoli, half of the stuffing and half of the cheese. Pour into casserole dish.
Mix remainder of the stuffing and cheese and add butter. Mix well and spread over top of the casserole.
Bake for 30 minutes or until light brown.
NOTE:
Cooked yellow squash may be substituted for the broccoli or use half of each.
