Ingredients

  • 2 sticks butter. cubed
  • 1 # semi-sweet chocolate, coarsley chopped
  • 1/4 c Amaretto
  • 8 large eggs
  • 1/4 c. sugar
  • 1 t. vanilla
  • 1/2 t salt

Step 1

Heat oven to 325 degrees. Use 1/2 T butter to grease springform pan and line with parchment paper. Completely cover bottom of an with foil so no water can get through during baking. Combine chocolate, butter and amaretto on double broiler until melted. Reserve. Combine eggs, sugar, vanilla and salt. Beat to frothy, about 8 minutes.Fold in 1/3 egg mix to chocolate mix, using spatula. Repeat x 2. Pour into springform. Place in roaster and fill roaster with water, half way up springform. Bake to slightly risen and edges are beinning to set, 40-45 minutes. Remove from oven and cool on rack to room temperature. Remove foil, cover, refridgerate overnight.Remove 30 minutes prior to serving, Invert onto plate and the reinvert onto serving plate. Dust with powder sugar.
