Baked Chicken Parmesan Meatballs

Ingredients
- 1 lb ground chicken
- 1/2 cup Panko breadcrumbs
- 1/4 cup onion, finely diced
- 1 T parsley, finely chopped
- 1/2 cup shredded parmesan cheese
- salt & pepper to taste
- 1 clove garlic, minced
- 1 egg, beaten
- 3 T olive oil
- 1 1/2 cups marinara sauce
- 4 oz fresh mozzarella, sliced

Step 1
Preheat oven to 400 degrees. Line a baking sheet with foil for easy cleanup, spray with non-stick cooking spray.
In large bowl thoroughly mix together ground chicken, breadcrumbs, onion, parsley, parmesan, salt/pepper, garlic and egg.
Shape meatballs a tad larger than a golfball, place meatballs at least 1" apart on baking sheet.
In a small bowl, mix together olive oil and marinara sauce. Reserve 1 cup for plating. Spoon remaining sauce atop of each meatball.
Bake 15-20 minutes depending on your oven, on upper 1/3 of oven.
Take baking sheet out of oven and place fresh mozzarella on each meatball.
Broil 3-5 minutes until cheese has melted.
Heat remaining marinara sauce, and use under meatballs when serving.
