Carrot Cake - Glenna C.

Ingredients

  • 2 cups flour
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 1 tsp. vanilla
  • 4 eggs
  • 2 cups sugar
  • 1 & 1/2 cup oil
  • 3 tsp. cinnamon
  • 3 cups grated carrots

Preparation

Step 1

Use 10 inch tube pan or 13 x 9 baking pan.

1. Mix all ingredients for two minutes with mixer on high speed.
2. Bake at 350 degrees for 45-50 minutes.


Cream Cheese Icing

8 oz. cream cheese, softened at room temperature.
½ stick butter
1 tsp. vanilla
1 cup 10x sugar

Mix all together and sprinkle top with chopped walnuts.
