Easter Neapolitan Cream Pie

Ingredients
- Crust
- 2 1/2 cups flour
- 1 tsp. vanilla
- 3 level tsps. baking powder
- 3/4 cup sugar
- 3 eggs
- 3 tbsps. butter
- Filling
- 4 oz. cornstarch
- 1 3/4 cup sugar
- 6 egg yolks
- grated rind of lemon
- 1 quart milk
- 2 squares unsweetened chocolate

Preparation
Step 1
Crust
Mix together flour, baking powder, and sugar. Add eggs, butter and vanilla. Work mixture with fingertips to form ball. Divide, use remaining dough for top crust. Let stand for 1/2 hour as it is easier to roll out.
Filling
In top of double boiler, mix cornstarch, and sugar. Add egg yolks stirring constantly to avoid lumps. Add lemon rind and milk slowly. Continue stirring until mixture is completely smooth. Cook slowly while stirring for about 20 minutes over low heat. Remove from heat and divide into 2 parts. Melt chocolate and add to one part cream. Add one part cream into unbaked pie shell, let set until firm then add chocolate cream. Roll out top crust and add to pie. Prick with fork on top crust. Bake @ 325 degrees until crust is brown about 45 - 50 minutes. Sprinkle with confectioners sugar.
