Ingredients
- 1. CRAB CAKES:
- 1 1) 1 1 pound crabmeat, picked over and any shell removed
- 2 2) 2) scallions
- 3 3) to salt, pepper, and cayenne to taste
- 4 4) 1/4 1/4 cup bechamel
- 5 5) to flour seasoned with salt, pepper, and cayenne to taste
- 6 6) 1 1/2 egg mixed with 1/2 cup milk
- 7 7) 7) panko crumbs
- 8 8) 8) clarified butter

Step 1
2. CHIPOTLE AIOLI::
1) 1 cup mayonnaise
2) 1-2 garlic clove, minced
3) 1-2 chipotle peppers, pureed
4) 1 teaspoon dijon mustard
Mix all ingredients for chipotle aioli together and chill, serve over crabcakes or on side.
