This is one of those Passover recipes that is so good it can be made and eaten year round. The need to separate eggs and use two different mixing bowls is well compensated by a good looking and delicious dessert.

Ingredients

  • 1 stick butter
  • 1 c. granulated sugar
  • 8 oz. chocolate chips (parve)
  • 8 eggs
  • raspberries or strawberries for garnish

Preparation

Step 1

1. Melt butter. Add sugar and chocolate chips.
2. Separate eggs.
3. Add egg yolks to chocolate mixture, one at a time. 4. Heat on stovetop to 165 degrees Fahrenheit.
5. Transfer to mixer. Beat until thick, for about 10 minutes.
6. In a separate bowl, beat egg whites until stiff. Fold egg whites into chocolate mixture.
7. Pour half of the mousse mixture into greased 9 inch glass pie plate or springform pan.
8. Bake in 350 degrees Fahrenheit oven for 25 minutes.
9. Remove from oven and cool.
10. Center will settle, leaving a higher rim. When cool, fill center with remaining mousse.
11. Refrigerate for several hours or overnight.
12. Garnish with fruit.

NOTE:

For this dessert to be kosher for Passover, all ingredients must be kosher for Passover.
