Ingredients

  • 1 large head cauliflower, finely chopped
  • 1 cup chicken stock
  • 2 T. roasted garlic
  • 1/2 t. salt
  • 1/4 t. pepper
  • 1/8 cup milk
  • 2 T. butter
  • 1 cup Cheddar or Velveeta
  • 1/4 cup Parmesan
  • 2 T. chopped chives

Step 1

Add the cauliflower to a medium sized saucepan along with the chicken stock. Simmer until tender, about 10 minutes. Add the garlic, salt, pepper, milk and butter. Puree with an immersion blender until smooth. Mix in cheese and chives. check for seasoning.
