  • 1 ) 4 packages (8 oz.) cream cheese, softened
  • 2 ) 1 cup sugar
  • 3 ) 4 teaspoons cornstarch
  • 4 ) 4 eggs
  • 5 ) 1/3 cup whipping cream
  • 6 ) 3 teaspoons vanilla extract
  • 7 ) 1 1/2 cups miniature semi-sweet chocolate chips
  • 8 ) 2 ready made graham cracker or chocolate crusts
  • In a mixing bowl, beat cream cheese until smooth. Combine sugar and cornstarch; beat into cream cheese. Add eggs; beat on low speed just until combined. Add the cream, vanilla and chocolate chips. Pour into pie crusts.

2. TOPPING::

1) 1 squares (1 oz. each) semisweet chocolate, melted
2) 1 tablespoon butter, melted
3) 1 cup powdered sugar
4) 1/4 cup whipping cream

Bake at 350 degrees for 40 minutes or until center is nearly set. Cool on wire rack. (Cheesecake top may crack, but topping will cover.) For topping combine chocolate, butter and sugar in a mixing bowl. Slowly beat in cream until mixture achieves spreading consistency. Spread over cheesecake. Refrigerate overnight.
