Cake Mix Cookies

You can make cookies from any flavor of boxed cake mix. Use the regular cake mix and not the "pudding in the mix" kind.

Ingredients

• 1 boxed cake mix
• 1/2 cup oil
• 2 eggs
• 1 Tbsp. water
• 1 to 2 tsp. flavored extract

Preparation

Step 1

Mix well with an electric mixer, roll into 1 inch balls, flatten onto an ungreased cookie sheet and bake for 8 to 10 minutes at 350* F.

Lemon Cookies- use a yellow cake mix and 2 tsp. lemon extract. When cooled, dust them with powdered sugar.

Sugar Cookies- use a white cake mix and 2 tsp. vanilla.

Chocolate Mint- use a chocolate cake mix and 2 tsp. mint extract.

Strawberry- use a strawberry cake mix; vanilla or strawberry extract and add some white chocolate chips.

Peanut butter - use yellow cake mix, no water & 1 c peanut butter.

This cookie dough, once mixed, can be frozen for baking later. Just roll into a log, cover tightly with plastic wrap, and then slice what you need and bake.
