Ingredients

  • 3/4 c. butter
  • 12 (1 oz.) squares semi-sweet chocolate, chopped
  • 1 1/2 c. sugar
  • 3 lg. eggs
  • 1 tsp. vanilla
  • 1 3/4 c. flour
  • 3/4 c. graham cracker crumbs
  • 1 1/2 tsp. bak. powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 c. white chocolate morsels
  • 1 (7oz) jar of marshmallow creme

Step 1

Line baking sheets w/ parchment paper. In med. bowl, combine butter & chocolate. Microwave on high in 30-sec. intervals, stirring between each, till chocolate is melted and smooth (about 1 1/2 mins. total). Let cool slightly.

In lg. bowl, combine sugar, eggs, vanilla. Beat on med. speed w/ elec. mixer till fluffy. Beat in butter mixture. In med. bowl, combien flour, graham crackers, bak. powder, bak. soda, and salt. Gradually add to sugar mixture, beating till combined. Stir in white chocolate morsels. Wrap in plastic wrap and chill 1 hour.

Preheat oven to 325. Roll into 1 1/2" balls. Place dough 3" apart on prepared baking sheets. Bake for 12-15 mins. or till edges of cookies are dry. Let cool on pans for 2 mins. Remove from pans, cool completely on wire racks. Spread 2 tsp. marshmallow creme on flat side of cookies, cover w/ flat side of second cookie, repeat for all to make sandwiches.
