Ingredients

  • Cake:
  • 1 egg
  • 1/3 cup sugar
  • 1 cup flour
  • 1 tbs baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1 cup quick cooking rolled oats
  • 1/4 cup vegetable oil
  • 2 large apples
  • Topping:
  • 1/4 cup sugar
  • 1/2 tsp cinnamon
  • 2 tbs butter, room temperature

Preparation

Step 1

Preheat the oven to 375°. Grease a 9 inch round cake pan.
In a mixing bowl, use an electric mixer to beat the egg and sugar together for 1 minute. In another small bowl, stir together the flour, baking powder and salt. Add half of this to the egg mixture and beat well. Add 1/4 cup of the milk and beat. Add remaining flour and then the rest of the milk and beat for about 1 minute. Stir in the oats and the vegetable oil and mix well.
Spread half the batter into the prepared pan. Peel the apples and cut them into slices. Arrange the apple slices evenly on top of the batter, then spread the rest of the batter on top. Don't worry if some of the apple slices poke out through the batter.
Bake the cake for about 25-30 minutes. When the cake springs back when touched lightly, it's done. Cool for 10 minutes, then cut into slices and serve warm.
