Ingredients
- 1 1/4 pounds peeled and deveined large shrimp
- 1 Tbsp olive oil, dicided
- 1 container grape tomatoes
- 1/2 cup sliced green onions
- 3 garlic cloves, minced
- 1/2 cup dry white wine
- 1 Tbsp fresh oregano
- 2 tsp butter
- 1/2 tsp pepper
- 1/4 tsp kosher salt
- 2 ounces feta cheese (about 1/2 cup)

Preparation
Step 1
Pat shrimp dry with paper towels. HEat 1 1/2 tsp oil in large skillet over medium-high heat. Add shrimp; saute 3 minutes or until lightly browned. Remove shrimp rom pan; drain.
Heat 1 1/2 tsp oil over medium-high heat. Add tomatoes; sauté 3 minutes. Add green onions and garlic; cook 1 minutes, stirring occasionally. Add wine and oregano; cook 3 minutes or until wine is reduced by half, scraping pan to loosen browned bits.
Add butter, pepper, and salt to tomato mixture, stirring until butter melts. Return shrimp to pan; cook 2 minutes or until thoroughly heated. Sprinkle with cheese before serving.
I served over quinoa for me and noodles for kids.
