LINGUINI WITH BACON & MUSHROOMS

Ingredients
- 6 slices bacon, chopped
- 1 onion, chopped
- 1 small green bell pepper, cut into strips
- 1/2 lb mushrooms, sliced
- green olives, chopped
- 1/2 cup chopped parsley
- 1 lb linguini
- 1/2 cup unsalted butter, cut into pieces
- 1/2 cup Parmesan cheese

Preparation
Step 1
Cut bacon into 1 inch pieces, saute and drain. Saute onion and green pepper in bacon drippings until soft.
Add mushrooms and cook over moderate heat for 10 minutes. Stir in olives, parsley, bacon, salt and pepper.
Cook linguini in boiling, salted water for 10 to 12 minutes, until tender. Drain.
In a serving dish, toss linguini with butter and pour sauce over it. Sprinkle with Parmesan cheese.
